Ingredients for Mustard Sauce
(Yield: Two Servings)
1/4 Cup Clarified Butter or Store-bought Ghee.
2 Tbs Freshly Squeezed Lemon Juice.
1 Tbs Dry Mustard
1 Tbs. Grain Mustard
2 Tbs Sugar
Mustard Sauce Preparation: Gently mix all ingredients together and refrigerate until you are ready to plate. The sauce will thicken as it cools in the refrigerator. Remove and keep warm for dinner service as needed.

Ingredients for Spinach
(Yield: Two Servings)
2 Cups Fresh Organic Baby Spinach
1 Oz. Blended Olive Oil
2 Oz White Wine
1 Tbs Freshly Grated Garlic
2 Oz Freshly Grated Parmesan Cheese
Salt & Pepper to Taste
Spinach Preparation: Heat up a pan and add the extra virgin olive oil and spinach. Sauté for 1 – 2 minutes. Add the white wine and garlic, season with salt and pepper to taste. Allow the spinach to wilt for about two minutes. Sprinkle with parmesan cheese.

Ingredients for Sweet Potato Chips
(Yield: Two Servings)
1 Fresh Whole Sweet Potato
2 Cups Extra Virgin Olive Oil
Sweet Potato Chips Preparation: Julienne the sweet potatoes using a stainless steel mandolin. Blanch the strips in cold water for about five minutes; remove and dry flat. Deep fry until crispy, drain, and set aside.

Ingredients for Scallops
(Yield: Two Servings)
8 Pieces of Large U10 Diver Scallops
2 Tbs Blackening Seasoning
2 Tbs Blended Oil
Scallop Preparation: Preheat oven to 400°F. Evenly coat scallops in seasoning. Heat sauté pan until it’s smoking hot. Reduce heat to medium; add the oil and scallops. Sear scallops for one minute on the first side. Turn and sear on the other side. Remove from stove. Place scallops in a preheated oven for two minutes to finish cooking. Remove from oven and set aside.

Plating: Artfully spread the mustard sauce in a circular pattern on each plate. Arrange scallops on top of sauce. Gently place the spinach in the center of each dish. Crown with the crispy, sweet potato chips. Bon Appétit!
