PorkysLocated in a funky waterfront Tiki hut just north of Marathon’s Famous 7 Mile Bridge, Porky’s Bayside is notorious for the best barbecue in the Keys.

Locals and visitors have been flocking here since the early 1950s including such notables as Ernest Hemingway, Elizabeth Taylor and Jimmy Hoffa. But BBQ isn’t the only big draw here.

Porky’s also serves up terrific boat-to-table seafood fresh from the docks, as well as some of the best sushi in the Keys.

One of our favorite apps is their signature Bahamian Conch Ceviche. It’s a fabulous appetizer, easy to prepare and you can make it right at home.

 
(Yield 8 – 10 6oz servings)

1 Lb Conch Meat (available at local seafood markets)
3 Tomatoes, seeded and diced
1 Cucumber, seeded and diced
1 Red or White Onion, diced, rinsed in cold water
1 Green Pepper
1 Jalapeño, seeded and minced
5 Large Limes, juiced
6 oz Clamato Juice
2 oz Chopped Mint, minced
1 oz Chopped Cilantro, minced
1-1/2 oz Garlic Salt

Preparation
Rinse, drain and pat dry the conch. On a clean cutting board, pound the conch out flat. Roughly chop the tenderized meat into bite-sized 1/4 – 1/2 inch cubes. Combine the rest of the ingredients and refrigerate for an hour or more before serving with your favorite tortilla chips. Presto – it’s that easy!

CHEF’S TIP: If you can’t find conch in your area, you can always substitute shrimp, scallops or another firm fish.
