Made with mussels, clams, calamari, and shrimp, this signature dish from the Italian Food Company packs a savory punch with delightfully simple flavors. A true classic, “Spaghetti Allo Scoglio” has many variations throughout Italy but the primary star is always the fresh “Catch of the Day”. Buon Appetito!
Ingredients
14 oz Cooked Spaghetti
9 oz Clams
9 oz Calamari
14 oz Mussels
12 oz Shrimp
3-4 Garlic Cloves, minced
One Dozen Cherry Tomatoes, halved
¾ Cup White Wine
2 Tbl Olive Oil
Red Pepper Flakes and Salt for seasoning
Prep Note:
Be sure to soak the clams in cold water and a teaspoon of salt for 2-3 hours to expel sand and other impurities. To clean the mussels, place them in a bowl and rinse them thoroughly with running water.
Preparation: Place mussels and clams in a pan and add enough water to create steam. Cover with lid. Over medium heat, let the clams and mussels open (about 7-10 minutes). The mussels and clams will have released their juices. Strain this juice and set it aside.
Remove most of the clams and mussels from their shells. Keep a few in their shells for garnish. Set it all aside.
In a pan, heat the olive oil. Add the garlic, season with salt and chili flakes.
Sauté for a few seconds. Add the calamari rings and cherry tomatoes. Cook for 5 minutes Add the white wine and let the alcohol evaporate. Add the shrimp and cook through about 5 minutes.
Add your freshly cooked pasta along with a ladle of the saved clam and mussel juice.
Add mussels, clams and fresh cut parsley; mix pasta with tongs. Top with mussels and clams still in the shell and serve.
