Even if you’re not much of a cook, this elegant appetizer is really easy to make and your holiday guests will absolutely love it. TIP: Make sure to drain the caviar on a paper towel before spooning it on top of the pie.
Ingredients
• 4 Hard Boiled Eggs – Chopped
• 2 Tbl Mayonnaise
• 1 Cup Minced Onion
• 6 Oz Cream Cheese – Softened
• 1/2 Cup Sour Cream
• 4 Small Jars Black Lumpfish Roe
• 2 Lemons – cut into wedges for garnish
• 3 Parsley Sprigs for garnish
Directions:
Grease an 8 inch spring form pan and set aside.
Stir together the hard-cooked eggs and mayonnaise.
Spread mixture evenly into the bottom of the spring form pan.
Sprinkle the minced onion over the top.
Stir together cream cheese and sour cream until smooth and then
spread over the onion layer.
Cover and chill at least 3 hours.
To serve, spread the lumpfish roe over the top. Run a knife around the edge of the pie, then remove the
side of the spring form pan.
Garnish with lemon wedges and parsley sprigs. Serve with Carr’s Crackers.
