Ingredients
(Yields 8 6oz servings)
1 Cucumber, peeled & seeded 1/4” dice
1/4 Red Pepper, seeded & 1/4” dice
1/4 Yellow Pepper, seeded & 1/4” dice
1/4 Green Pepper, seeded & 1/4” dice
1/2 Yellow Onion, 1/4” dice
1 Tbs Freshly Chopped Parsley
2 Tbl Fresh Basil, finely cut
2 Tsp Fresh Chopped Dill
½ Cup Celery, finely diced
¾ Cup Italian Dressing(Wishbone Brand)
¾ Cup Tomato Juice
1 – ½ Tsp. Fresh Garlic, chopped
1 – ½ Tsp. Vietnamese Chili Garlic Sauce (or any hot sauce of your choice)
1 Tbl Fresh Cilantro, chopped
1 – ½ Cups Fire Roasted Dice Tomatoes & Juice (Canned will work to save you time)
Salt & Pepper to taste

Preparation
Combine all ingredients in stainless steel mixing bowl and mix well. Transfer to storage container. Cover, label, date, and refrigerate. Shelf life is about 3 days.
