INGREDIENTS
Sauce:
8 Oz Red Pepper
3 Oz Shallots
1 Oz Ginger
4 Oz Carrots
2 Oz Red Curry Paste
1 Cup Coconut Milk
2 Oz Pineapple
2 Garlic Cloves, minced
1 Tsp Sugar
Vegetables:
Red Pepper- Julienne
Snow Peas
Mushrooms – Julienne
Carrots – Julienne
Bok Choy – halved and rinsed
PREPARATION
For the Sauce:
Roughly chop vegetables and sauté. Add red curry paste and sugar. Once sugar dissolves, add pineapple and coconut milk. Bring to a boil. Once boiling, reduce heat and simmer for 15 mins. Remove from heat and mix thoroughly.
For the Vegetables
Sauté in olive oil and garlic. Once tender, mix sauce into vegetable sauté. Plate and serve with jasmine rice. Enjoy!
