Before grabbing her spatula and heading for the Keys, Lori Shubert was a highly successful caterer and cake artist from Boston. Although traditional cupcakes were her forte, many customers begged her to start baking mini-cupcakes.

The idea intrigued Lori but there was one big problem: paper liners dry out cupcakes and she was not about to have her name and recipes associated with a lesser quality product. 
 So what did she do?

cupcake shusiSeeing how the middle of the cupcake is the most savory part, she began experimenting with hollowing out normal cupcakes and combining them with her out-of-this-world butter cream frosting. But they were still full size cupcakes. Then the idea struck. Why not take two of the most popular foods, cupcakes and bite size sushi, and make them one?

Cupcake Sushi was born.

Lori starting whipping up cupcake sushi recipes as fast as she could, storing her tasty pieces of art in the freezer. And then lightening struck once again: why not duplicate the traditional sushi bar experience by preparing the rolls right in front of her customers? The concept was perfect for her new product’s appeal. Watching such an abstract original concept come to life would only heighten the anticipation.

cupcake shusiGripped by her Cupcake Sushi concept, Lori waved goodbye to Boston and headed to Key West for a fresh start. Her elegant bite size pieces of art are now a huge hit — receiving rave reviews throughout the Keys.

One thing’s for sure: Lori’s Cupcake Sushi is a labor of love, artfully crafted to be incredibly enjoyable.
